Ingredients&lt;br /&gt;
&lt;br /&gt;
*Two 8 ounce packages of mushrooms, sliced&lt;br /&gt;
&lt;br /&gt;
*1 medium yellow onion, chopped&lt;br /&gt;
&lt;br /&gt;
*4 cloves of garlic, minced&lt;br /&gt;
&lt;br /&gt;
*3 tablespoons of butter&lt;br /&gt;
&lt;br /&gt;
*½ tablesppon of thyme&lt;br /&gt;
&lt;br /&gt;
*½ tablespoon of rosemary&lt;br /&gt;
&lt;br /&gt;
*Pinch of cayenne pepper (optional, if you don’t like spicy, leave this out)&lt;br /&gt;
&lt;br /&gt;
*¾ to a cup red wine&lt;br /&gt;
&lt;br /&gt;
*3 tablespoons of flour (plus extra for thickening)&lt;br /&gt;
&lt;br /&gt;
*4 cups chicken stock&lt;br /&gt;
&lt;br /&gt;
*3 cups cream&lt;br /&gt;
&lt;br /&gt;
*Salt, pepper, and nutmeg to taste&lt;br /&gt;
&lt;br /&gt;
Instructions&lt;br /&gt;
&lt;br /&gt;
Melt butter in soup pot&lt;br /&gt;
&lt;br /&gt;
Add mushrooms, onions, and garlic&lt;br /&gt;
&lt;br /&gt;
Start to cook down and then add thyme, rosemary, and cayenne pepper&lt;br /&gt;
&lt;br /&gt;
When mushrooms and onions are soft, add red wine&lt;br /&gt;
&lt;br /&gt;
Bring to a boil and cook down for a few minutes&lt;br /&gt;
&lt;br /&gt;
Slowly add flour while whisking or stirring vigorously&lt;br /&gt;
&lt;br /&gt;
You should havcream of mushroom soupe a reasonably thick mushroom mixture in pan, as you can see in my picture.&lt;br /&gt;
&lt;br /&gt;
Add chicken broth and stir&lt;br /&gt;
&lt;br /&gt;
Bring to a boil&lt;br /&gt;
&lt;br /&gt;
Stir in cream and add flour a tablespoon at a time while using a hand blender until your soup is at the desired consistency (it won’t be as thick as Campbell’s but it shouldn’t be watery). I used an extra 3-4 myself.&lt;br /&gt;

Add salt, pepper, and nutmeg to taste&lt;br /&gt;
