Ingredients

  • Two 8 ounce packages of mushrooms, sliced
  • 1 medium yellow onion, chopped
  • 4 cloves of garlic, minced
  • 3 tablespoons of butter
  • ½ tablesppon of thyme
  • ½ tablespoon of rosemary
  • Pinch of cayenne pepper (optional, if you don’t like spicy, leave this out)
  • ¾ to a cup red wine
  • 3 tablespoons of flour (plus extra for thickening)
  • 4 cups chicken stock
  • 3 cups cream
  • Salt, pepper, and nutmeg to taste

Instructions

Melt butter in soup pot

Add mushrooms, onions, and garlic

Start to cook down and then add thyme, rosemary, and cayenne pepper

When mushrooms and onions are soft, add red wine

Bring to a boil and cook down for a few minutes

Slowly add flour while whisking or stirring vigorously

You should havcream of mushroom soupe a reasonably thick mushroom mixture in pan, as you can see in my picture.

Add chicken broth and stir

Bring to a boil

Stir in cream and add flour a tablespoon at a time while using a hand blender until your soup is at the desired consistency (it won’t be as thick as Campbell’s but it shouldn’t be watery). I used an extra 3-4 myself.

Add salt, pepper, and nutmeg to taste
